Bioshock
The multiplayer aspect from the newly released Bioshock 2 was far from amazing, and disappointed nearly everyone I know who played it. The main gripe: the maps were too small. There were a lot of cool elements, but overall it was a lacklustre experience.

Translating Bioshock to MMO format would be a very challenging process, but if done well it would be amazing. Keep it a first-person shooter or, alternatively, change the formula to that of something like Star Trek online where there are still guns and powers, they're just commanded on the skill bar. I think it's the world and story behind Bioshock that really keeps me immersed in it, and I can see those elements being easily translated into MMO format.
For those who haven't played Bioshock, you're basically in an underwater city (called Rapture) where it's perfectly acceptable to run around killing people and powering up your killing tools and special powers. That's just a brief part of the world and story, but that right there would be enough to entice me into an MMO Rapture. Anyone who's played Bioshock will know it should be easy enough to determine classes (think: Splicers, Big Daddies, Little Sisters), and have those classes work together in raids or even against each other in PvP.
There is a huge gap of untold story in the timeline of Bioshock also, which seems to me like a perfect place to slot in an MMO and flesh out the already amazing story further. All the elements are there, it would just be a matter of translating them from single player to MMO.
The Legend of Zelda Series
This is a tricky one, but at the same time seems like a logical step for the franchise. The Legend of Zelda series has begun to get stale as of late, although people keep snapping up each game like it's gold-plated and comes with a free car, and I'd really like to see it take a risky next step. The world of Zelda is perfect for an MMO. You already have many distinctly different races, all with their own places in the world and each one would be a blast to play. Want to play as Link? Choose the Kokiri race; start in the forest. (Note: the fairies could be used similarly to the 'Pran' system in Aika) Prefer the fiery volcanoes of Goron Mountain? Roll Goron.

The Legend of Zelda Series
Everything is in place it would just be a matter of selecting how exactly to translate the game from single player. I'd like to see some real-time action incorporated in the game but I think I'd still be quite content with the skill-button type combat also. The funding behind the game (considering it's a Nintendo franchise) would ensure amazing presentation and the music, composed by the famous Koji Kondo, would be nothing short of fantastic-probably the best the MMO world has seen yet.
